It all begins
in the vineyard

Without a good vineyard there is no good wine: that is the engine of everything we do. We work with the Toro terroir, where river pebbles and sand meet in the same soil, with old bush-trained vines and the extreme climate of the area. From that sum comes a Tinta de Toro capable of showing all its splendour.

The ageing

The wine tells us
when it is ready

Ageing is one of the most important parts of what we do. Here respect for the variety meets the work of the barrel, which brings complexity and nuance without covering the liveliness and fruit of the Tinta de Toro. Our ageing is dynamic and follows no fixed calendar: it is our winemaker, through sensory tastings, who decides when the wine is truly ready to leave.

Silence,
temperature and time

A crucial stage: in contact with the glass the wine settles and comes together. We hold deep respect for that rest in silence, away from vibration, at controlled temperature and with no light reaching the bottles. Only then do they leave for the market in full form.

About our wines

Is Tinta de Toro the same as Tempranillo?

Genetically yes: Tinta de Toro is a variant of Tempranillo, just like Tinta del País in Ribera del Duero or Cencibel in Valdepeñas. But it has spent centuries adapting to the sandy soils of Toro and behaves so differently —more body, more alcohol and more tannin— that in practice it is treated as a variety of its own.

What dishes does a Toro wine pair with?

With dishes that carry weight: red meats and roasts, slow-cooked stews, cured cheeses and Iberian charcuterie. A Toro red overwhelms very light or delicate dishes, because its concentration calls for food of equal strength.

Does Latarce Tinto Dulce have added sugar?

Not a drop. It is not a fortified or a generoso wine: it is made from Tinta de Toro harvested overripe, leaving the fruit longer on the vine until it concentrates its sugar naturally. It depends on the weather of each vintage, so production is always very limited.

What sets an artisan vermouth apart from an industrial one?

The base wine and the maceration. An industrial vermouth starts from a neutral wine and uses extracts or essences to speed up the process. Vermut Gilda starts from our own D.O. Toro wine and macerates herbs, roots, barks and spices, always with wormwood as the central ingredient.

Can the wines be bought on this website?

Can the wines be tasted before buying them?

Sí. En la visita con cata se prueban seis vinos de la casa acompañados de jamón ibérico y quesos zamoranos, y ese mismo día hay un 10 % de descuento en la tienda y en el restaurante. La visita cuesta 25 € per person y se reserva por teléfono.
